I have a few students finishing the Unit 3.27 unit project but I am ready to move onto the Machine Learning unit. Is there any way keep 3.27 unlocked and move onto another unit with the rest of the class?
Although you can hide it from the dashboard, you can’t really lock it, so if they have the link to get to 3.27, they will still be able to get there, even if it is hidden, so perhaps finding a way to share that link with them would be the easiest way to accomplish that.

I do this by creating assignments in Google Classroom. This allows students to still access previous units if they need to. Do you have an LMS that you could use to do this?
