In Elementary Game Design, Lesson 3 the students are introduced to “Set Type: Environment” but when we use Sprite Lab, I don’t see that block. Is there another way to create an environment sprite?
Great question! A lot of these behaviors are taught in the course of Unit 3 of CS Discoveries, such as in Lesson 20, Collision Detection. The elementary game design block "yada yada"s things the middle school students are expected to code.
You can always feel welcome to submit a feature request to include this in Sprite Lab. It would be a great addition to scaffold some of the course content for learners who need that extra help.

I am also looking for a solution to this. We have just completed the lessons on setting sprites to environments but are unable to use this in Sprite Lab. Is there any work around?
In the unit, if you take the set type to environment block out and put it into the workspace and then remix the game, you will be able to CTRL C and CTRL V the environment block (since you placed it in your workspace before remixing the game). That is the only workaround I have found. It will disappear in the sprites tab after you remix it but if you put it out in the workspace while under the unit, it will work as you can just copy and paste it as neccessary.
