I would like to give my students coding opportunities outside the scope of the daily lessons. Is there a way to use the app / widget for coding for this outside of an already created lesson? Thank you!

Yes. Next to their name on the code studio page should be a create dropdown. Click that and options appear - App Lab is probably what they will want to use.
